    Love is in the air this season. Whether Christmas is spent with family, friends, or that special one, the scenic view and cool breeze of Tagaytay offers a relaxing respite from city life that everyone can enjoy.

    In line with this season’s festivities, Discovery Country Suites in Tagaytay launched its annual holiday menu on December 1 at the Restaurant Verbena, offering a unique dining experience that is full of flavor and vibrant colors.

    Celebrated resident chefs Anthony Raymond and Celmar Ambida presented the season’s harvest, using all-local Tagaytay produce in their scrumptious dishes. Offered until January 2014, the holiday menu includes signature dishes such as Potato Agnolotti with smoked bacon, Parmigianno Reggiano and Parsley Pesto; Pan-fried Diver Scallops with Sweet Corn Puree; USDA Wagyu Hanging Tender with Butternut Squash Puree, Roasted Mushrooms, Brussel Sprouts, and Cabernet Reduction; and Pumpkin Cheesecake with Berry Coulis and Candied Pistachios.

    “This menu is an American-inspired concept but considering the availability of products. Our ingredients are locally produced, which assures the freshness and quality of our food,” said Chef Anthony.

    An evident yellow and purple color is seen in most of the featured dishes, one that Chef Anthony attributes to the “California-driven” menu that was considered during its creation.

    “color is something we definitely consider in making our menu. We want to create more fluff, so we decided to use colorful ingredients like the squash and edible flowers, which are both abundant in Tagaytay” he said.

    Restaurant Verbena boasts of its accomplishment as being named one of the best restaurants in the Metro, based on 2012’s Miele regional guide book to restaurants in Asia, placing second to the famous neighboring Antonio’s Restaurant.

    Chef Anthony attributes this feat to the solidarity and teamwork practiced by the hotel’s Food and Beverage department, as well as months of preparation and planning.

    “We start conceptualizing our menu three to four months ahead. The kitchen team expresses what the client likes and we take their [the staff]opinion into consideration. We feed off the strength of the team and use it to our advantage,” Chef Anthony shared.

    The quaint country manor vibe fits with its diverse menu offered in their intimate Restaurant Verbena, while their seven uniquely themed luxury accommodations provide privacy for a blissful weekend rest.

    Besides their holiday menu, guests are welcome to enjoy the outdoor Jacuzzi and partake the popular wine and cheese set up by the lobby fireplace during cocktail hour. Milk and cookies are also offered just before bedtime.

    For vegetarians and health-conscious guests, the chef promises to whip up the healthiest dishes upon request and availability of products. Seared Foie Gras will be served in the four-course menu of choice, as well as coffee or tea paired with the dessert.
