French wine expert meets Filipino mallers

Renowned French wine expert Jacques Puisais flew into the Philippines for a French wine and cheese appreciation talk at the SM Aura Premier.

A joint project of the Embassy of France in the Philippines and the Taguig City mall, the event was a rare opportunity for mall-goers to meet the celebrated oenologist and taste philosopher up close and learn the pleasures of wine and cheese.

Puisais is the founding president of the French Institute of Taste, and the honorary president of the French and International Union of Oenologists. Recognized by the French Ministry of Culture in 1999, he founded the concept of concretizing the artistic and universal aspects of taste through the “Images and Taste Workshop: The Simple and Natural Pleasure of Tasting.”

At his Manila visit Puisais shared some wine and cheese practices with the mallers who thoroughly enjoyed sophisticated activity. He showed them how to properly hold the wine glass by holding it by the stem or by the base—never by the glass itself.


He also emphasized the importance of starting a “conversation” with the wine and let it talk to you. “We forget that drinking wine is an experience itself, armed with its own story of where it was made, by whom, and what grapes were used, “ he said.

In the end, “it’s not essentially about the rules of wine pairing, but about how the wine makes you feel when you pair it with something. It doesn’t have to be food, as it can also be music, visual arts, dance.”

Guests were able to taste and pair 2012 Chateau Lagnet: Bordeaux Superieur Red Wine and Guigal Crozes-Hermitage White Wine with Bleu Cheese selections: Roquefort d’Argental and Fourme d’Ambert on Sourdough Crisps.

Among the notable guests were Madame Isabelle Garachon, wife of the French Ambassador, the Embassy’s Cultural Counsellor Michel-Stanislas Villar, Audiovisual Attache Martin Macalintal, and Press Attache Camille Conde. Also present were South Africa Embassy’s Political Counsellor Tshire Kau, Monaco’s Honorary Consul Fortune Ledesma, the French School of Manila’s Myriam Carcy, and International Bazaar Foundation’s Penny Farolan, Rose Villamor, Nora Salazar, and Blessie Cabrera.

SM officials led by Regional Operations Manager Bernice Baculi and SM Aura Premier Mall Manager Carlos Vilchez welcomed Pusais and his hosts.
