What is your seasoning of choice? The list of spices readily available in your pantry? The answer can be understandably extensive, given the many wonderful spices out there, and the various dishes that can be created in the process. In fact, come to think of it, the history of the Philippines is actually hinged on the exploration of spices by Magellan, so he and a team set forth to sail to this other side of the world.

Much of the spices I use in my everyday cooking has been influenced by the food I discovered while living overseas and the travels made along the way. I remember how pleasant the discovery was when I first tasted cumin, and how mustard spice can absolutely raise the flavor profile of your dish to make it really memorable. Of course, we have our basic salt and pepper — and they do the job brilliantly too — but as we try to create and recreate dishes, more and more ideas will come in, and some secret ingredients could be discovered along the way.
