Buro is a Tagalog word which means to pickle or to salt. I first came across this when I was young. Together with my parents, the entire family would visit Pampanga (my maternal roots) during their annual fiesta, and we would be at my grandmother's ancestral house in Guaga, feasting on dishes that have been pickled/salted. We call that, mga binurong pagkain.

I wasn't fond of buro back then due to the smell but as I got older and developed an interest in fermentation, it wasn't difficult for me to take a second look at it.
